- 1 cup unsalted butter softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 1/2 cups sweetened shredded coconut divided
- 1/2 cup powdered sugar for rolling
Preheat oven to 350°F.
Line a baking sheet with parchment paper.
Beat 1 cup softened unsalted butter and 1/2 cup powdered sugar until smooth and creamy.
Mix in 1 teaspoon vanilla extract.
Add 2 cups all-purpose flour and 1/4 teaspoon salt.
Stir until dough forms.
Stir in 1 cup sweetened shredded coconut.
