Ingredients
  

  • 1 1/2 pounds ground beef
  • 1 medium yellow onion diced
  • 2 cloves garlic minced
  • 3 pounds Yukon Gold potatoes peeled and thinly sliced
  • 2 cans condensed cream of mushroom soup 10.5 ounces each
  • 1 cup whole milk
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese divided
  • 2 teaspoons kosher salt divided
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried parsley
  • 1 tablespoon butter for the baking dish

Instructions
 

  • Heat a large skillet over medium heat.
  • Cook the ground beef and onion for 8 to 10 minutes.
  • Stir in garlic, 1 teaspoon salt, pepper, paprika, and parsley.
  • Drain excess grease, then set the beef mixture aside.
  • Whisk the soup, milk, sour cream, and remaining salt in a bowl.
  • Spread a little sauce across the dish bottom.
  • Layer potatoes, then beef, sauce, and a little cheese.
  • Repeat the layers until everything is used.
  • Cover tightly with foil and bake for 60 minutes.
  • Uncover, top with the remaining cheese, and bake 20 minutes more.
  • Rest the casserole 10 minutes before scooping.

Notes

Bake in a buttered 9x13-inch baking dish at 350°F.
