Ingredients
  

  • 4 boneless skinless chicken breasts about 2 pounds total
  • 1/2 cup prepared basil pesto store-bought or homemade
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon crushed dried red chili pepper adjust to taste
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • Optional: 2 tablespoons grated Parmesan cheese for serving

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Place the chicken breasts in a baking dish large enough to hold them in a single layer.
  • In a small bowl, combine the pesto, olive oil, minced garlic, crushed dried red chili pepper, salt, and black pepper.
  • Spoon the pesto mixture evenly over the chicken, coating each piece completely.
  • Bake the chicken uncovered for 25 to 30 minutes, or until the internal temperature reaches 165°F (74°C).
  • Remove the chicken from the oven and drizzle with fresh lemon juice.
  • Let rest for 5 minutes before serving.
  • If desired, sprinkle with grated Parmesan cheese before serving.
