This cozy turkey soup turns leftover turkey into a warm, budget-friendly meal. It’s simple, hearty, and full of tender turkey, noodles, and veggies in a golden broth.

Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 3 medium carrots peeled and sliced
  • 2 celery stalks sliced
  • 3 cloves garlic minced
  • 8 cups chicken or turkey broth
  • 3 cups cooked turkey chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 2 cups egg noodles
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper
  • Juice of half a lemon optional

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion, sliced carrots, and sliced celery.
  • Cook 5 to 7 minutes, until vegetables begin to soften.
  • Stir in minced garlic and cook 1 minute.
  • Pour in broth.
  • Add chopped turkey, dried thyme, dried parsley, and bay leaf.
  • Bring mixture to a boil.
  • Reduce heat to low and simmer 15 minutes.
  • Stir in egg noodles.
  • Cook 10 minutes, or until noodles are tender.
  • Season with salt and black pepper.
  • Add lemon juice if desired.
  • Remove bay leaf.
  • Serve hot.
