This cozy turkey soup turns leftover turkey into a warm, budget-friendly meal. It’s simple, hearty, and full of tender turkey, noodles, and veggies in a golden broth.

- 2 tablespoons olive oil
- 1 medium onion diced
- 3 medium carrots peeled and sliced
- 2 celery stalks sliced
- 3 cloves garlic minced
- 8 cups chicken or turkey broth
- 3 cups cooked turkey chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 bay leaf
- 2 cups egg noodles
- 1 teaspoon salt or to taste
- 1/2 teaspoon black pepper
- Juice of half a lemon optional
Heat olive oil in a large pot over medium heat.
Add diced onion, sliced carrots, and sliced celery.
Cook 5 to 7 minutes, until vegetables begin to soften.
Stir in minced garlic and cook 1 minute.
Pour in broth.
Add chopped turkey, dried thyme, dried parsley, and bay leaf.
Bring mixture to a boil.
Reduce heat to low and simmer 15 minutes.
Stir in egg noodles.
Cook 10 minutes, or until noodles are tender.
Season with salt and black pepper.
Add lemon juice if desired.
Remove bay leaf.
Serve hot.
